Gang Jeud is made with chicken broth, fish broth, or pork broth. You would serve a Gang Jeud dish to balance other hot dishes or other non-curry. So, when there is a hot dish on the table, Gang Jeud is the fire engine hose.

Preparation Notes
Add chicken bones, spices, soy sauce, fish sauce and water in a large pot. Cover the bones with water. When the broth starts to boil, turn down the heat and let the broth simmer. Never cover the broth with lid, if you want a clear soup. Let it boil for at least half an hour to get the flavor.
