Thai desserts are very different from Western desserts. Where Thai chefs could not fall back on chocolate or flour, they took advantage of the indigenous ingredients. To this day, very few Thai people could tell you how to bake a cake. In fact, western styles of cakes are so rarely made, that most Thai people don't use measuring cups.
