In Thai cooking, fresh roots are usually used. Southern Thai cuisine rely heavily on the turmeric. I love to add ground or crushed turmeric to my grilled chicken marinade or my fish marinade.
You can frequently find it in an Indian grocery. Turmeric can be kept in a refrigerator for a few weeks.
