Salty Chinese Cabbage is used as a condiment in noodles and adds much of the complexity of the flavor.Salty Chinese Cabbage frequently comes in cool-looking old-fashioned earthenware jar that's a couple inches high and looks like it came out of the ground, put there 200 years ago.
Picking good salty cabbage is kind of tough, because it's in a jar, but one of the traits of a good jar of salty chinese cabbage is one that does not have much sand.
