Galangal or 'kha' in Thai is used many soups and curry pastes. It is a root like ginger but larger and rounder than ginger. It tastes also milder than ginger.
If you live in a nice and warm place with no frost try grow galangal in your yard. It has beautiful flowers that resemble orchids.
