Tung Chai   ตังฉ่าย

Preserved Chinese Cabbage is used as a condiment in noodles and soups. It is one of the ingredients that adds flavor complexity to a simple noodle dish.

Preserved Chinese Cabbage frequently comes in cool-looking old-fashioned earthenware jar that's a couple inches high and looks like it came out of the ground, put there 200 years ago.

Picking good preserved Chinese cabbage is kind of tough, because it's in a jar, but one of the traits of a good jar of preserved Chinese cabbage is one that does not have much sand. You want light brown to medium brown color. And it should not wet or dry looking. It should feel like there is some moisture inside the cabbage.
