This fried rice recipe has a different twist from more common fried rice because of the flavor of the olives. The Chinese olives taste quite different from Mediterranean style olives.

In Thailand, the olives are imported from China, thus make them relatively expensive. So the Chinese olive fried rice is not so common that you would find it in any restaurants. Unlike other common fried rice, there is no egg in Chinese olive fried rice.

You can substitute ground chicken or turkey for the ground pork.

You can try substituting nicoise olives for the Chinese ones, but you will find that there's a distinct difference in flavor that you will miss. In Thailand, you can get pitted olives packed with salt. It doesn’t look like olives any more but chunks of dark purple mass. If this type of olive is available in your area, this fried rice is a snap to make.

The key to cooking great fried rice is the temperature of the wok. As ingredients get added, the wok cools a little. So add a little at a time. Keep the wok on high heat at all times.
