Pan Fried Mackerel is the major component of a quick meal.


Method
The Thai mackerel is flat and about 6-7 inches long. They are available at oriental markets fresh frozen or steamed frozen. Choose the steamed frozen ones.
Pan fried in vegetable oil until light brown. If you are concerned about oil, try broil in oven on top rack for a few minutes.
The fried mackerel is eaten with shrimp paste chili sauce and vegetables.
