- 1 pinch salt
- 1/4 cup sugar
- 1/4 cup vinegar
- 1/2 lb young ginger
Method
Combine vinegar, sugar and salt together. If you prefer the fast microwave method, heat up the mixture in microwave until sugar is dissolved. It should take about 3-5 minutes, depending on your microwave. If you prefer the old fashion method, heat up the mixture in a pot until sugar is dissolved. Let it cool.
Peel the ginger skin off. The skin is very thin and should be easy to peel or scrape off. Slice ginner either cross-sectional or along the plane real thin, paper thin. Add sliced ginger to the mixture when it is cool or luke-warm. Keep refrigerated in plastic or glass container for months.
