Chinese egg noodles is basically eggs and flour, just like pasta. These egg noodles are not your normal American wide egg noodles (with the see through egg on the package). It is freshly made and kept well in freezer for a long time. I use thin one for Mah Mee Moo Dang. It is the size of angel hair pasta. In the old days, (I'm sure it is still made this way in China) it is made by pulling the dough until getting the desire thickness. Making the noodles this way is a real skill.
