Nam prig pow or chili paste is a dark brown paste from Thailand. It can be kept in the fridge for months. It is available here in the US in Oriental groceries in glass jars. There are many variations of this, but the core mixture is: shallots, garlic, shrimp paste, dry chili pepper, salt, and sugar. Frequently there is also tamarind paste and dried shrimp.
Actually, the term nam prig pow is used incorrectly. It should be called nam prig pad. Pad is stir fried. The true nam prig pow is when all the ingredients are grilled and ground. The nam prig pow in jars come from frying 'nam prig pow' in oil and add sugar. However, now most people use the term 'nam prig pow' interchangable with 'nam prig pad'.
